Aromatics: Beautiful notes of ripe black cherries and plums, oak spices this is plush wine, with a charming generosity to it. Their is an attractive elegance to the noise calling urgently for a sip.
Palate: Very fine and elegant Merlot, it reminded me of other very famous 100% Merlot Pomerol I had the luck to taste when I studied wine in Bordeaux. Love the juicy and ripe texture with more black cherries and plums. A great concentration, depth and a spherical fleshy feels thanks to its sandy terroir and the very old vines. The tannins are silky and soft in its most attractive way. Clos Plince from Gombaude is a secret well kept.
About the wine: This is unique and limited single vineyard wine made from 1.15 ha plot with some 100 years old vines on sand over clay. Harvested by hand, the grapes are sorted, de-stemmed and lightly crushed. The wine undergoes natural fermentation in temperature-controlled concrete and stainless steel cuves for 3-4 weeks. Regular pumpovers at the beginning of fermentation (2-4 times a day). The wine is aged for 12 months in old french oak barrel (new and old) and clay amphoras. This wine is unfined, unfiltred. Low sulphur.
When to drink: Decant for 1 or 2 hours and drink now or 8-10 years after vintage.
Service: 15 to 16 degrees C in Bordeaux glass.
Food match: Grilled meat dishes (beef or duck), grilled tuna dish or spatchcock in sauce.
