Palate: Rich and powerful, beautiful sweet texture with a long finish. Fantastic balance!
About the wine: Montbourgeau produces a tiny amount of a vin de paille. The grapes are left to raisin in the open air in the attic until Christmas or early January, effectuating a high degree of concentration in sugar through dehydration. Then the grapes will be pressed and give a very sweet must of 340g/l residual sugar. This must then slowly ferment to 14% with 100 to 120g/l of residual sugar. The wine will then be aged 3 to 4 years in old oak barrels. It takes 100 kilograms of grapes to produce just 10 liters of Vin de Paille at Montbourgeau. On average five hectoliters are produced in the years they decide to make a Vin de Paille. Volumes are very limited, exclusively in 375ml bottles.

Food match: As an aperitif with a quiche with Comté, foie gras on toast or for dessert with an apricot tart or tart tatin.
