Appellation: Alsace
Terroir: The Searing or sea ring, remind us of the presence of the sea and limestone sediments from the Oligocene era. We clearly see the influence of the Water element in this terroir. The wine from this terroir are juicy, large, dense, powerful and make you salivate. The soils are made of marl, limestone (Oligocene) and sandstone (Buntsandstein) exposed South-East.
Grapes: Riesling (100%)
Farming: Organic & Biodymamic (certified)
Aromatics: Notes of candied lemon, ginger, saline character and mineral notes,
Palate: Rich and textural, with a juicy candied lemons flavour. Beautifully elegant and saline with a great finish making you salivate.
About the wine: Work of the soil by ploughing to encourage deep roots for a better terroir expression. The vines that make this wine are in average 34 years old. Hand-picked, whole bunch pressing “a l’Alsacienne” with a pneumatic press, fermentation with natural yeast in stainless. Ageing on lees for 10 months.
When to drink: Drink now or in the next 8-10 years after vintage.
Service: 8 to 10 C degrees in Riesling glass.
Food match: Marinated salmon with fennel and cumin, turbot fish or a sting ray court bouillon et its black butter and capers.
