Appellation: Alsace
Terroir: “Mirror” of the light, with the quartz reflection from the Stein plot, this site is the marriage between the air and the light so important in Biodynamie. This cuvee is made from a plot in the heart of the Grand Cru Spiegel in the lieu-dit ‘Stein’. The soil is made of marl and sandstone. On the Southern part the terroir have less clay and is more rocky.
Grapes: Riesling (100%)
Farming: Organic & Biodymamic (certified)
Aromatics: This Riesling is tinted of vibrant notes of lemon, with the fragrance of coins, orange and kumquat. Ripe nectarine, flowers, honey and minerals.
Palate: Beautifully dense wine with lively flavours of lemon, apple, and ripe peach. Lovely tension and length with a seducing balance.
About the wine: Work of the soil by ploughing to encourage deep roots for a better terroir expression. The vines that make this wine are in average 43 years old. Hand-picked, whole bunch pressing “a l’Alsacienne” with a pneumatic press, fermentation with natural yeast. Ageing on lees for 10 months.
When to drink: Drink now or in the next 8-10 years after vintage.
Service: 8 to 10 C degrees in Riesling glass.
Food match: River fish, Sole meuniere, bar fish en croute on a bed on spinach with a sauce beurre blanc.
