Aromatics: Apple, pear, lemon and white flowers on the nose.
Palate: On the palate this wine is very elegant. An appealing blend of crisp acidity, mineral notes. Well balanced, subtle and rounded wine with lightness and precision.
About the wine: South-facing 30 years old vines on the left bank of the Serein River in between the village of Courgis and Prehy. Also known as Les Beauregards this 1er Cru is the most South Eastern of all and also one of the smallest 20 hectares (including Cote de Cuissy). Despite this rather southern exposure, Les Beauregards remains a cool ‘Climat’ due to its topography and its location at the bottom of the valley. The clay soils are shallow and the limestone marl never far away. Its stony and well-draining soil facilitates the circulation of water. The exceptional view facing the Climat of Les Beauregards explains its name! The wines is aged on lees until bottling. Unoaked.
When to drink: Drink now or in the next 5-6 years.
Service: 8 to 10 C degrees in large burgundy glass.
Food match: Oysters and Chablis are a classic match. Otherwise, sashimi and other fish dishes, or pungent washed-rind cheeses.
