Appellation: Alsace
Terroir: Vosges sandstone subtract from the Bundsandstein, deep clay and sand soil.
Grapes: Riesling (100%)
Farming: Organic & Biodymamic (certified)
Aromatics: Notes of lime, herbs, smoke and mineral.
Palate: Long and savoury wine with a harmonious tension and vibrancy. We love its generosity and flesh in the mid palate as well as its stony tension. Incredible level of quality for a mere Alsace Riesling thanks to almost half of Dirler-Cade vineyard classified as Grand Cru.
About the wine: Work of the soil by ploughing to encourage deep roots for a better terroir expression. The vines that make this wine are in average 30 years old. Hand-picked, whole bunch pressing “a l’Alsacienne” with a pneumatic press, fermentation with natural yeast in old oak foudres. Ageing on lees for 10 months.
When to drink: Drink now or in the next 6-8 years after vintage.
Service: 8 to 10 C degrees in Riesling glass.
Food match: Sea food platter, fish in sauce, goat or sheep cheese
