Appellation: AOC Chignin Bergeron (Savoie region)
Terroir: Clay and limestone. Lieu dit “Les Parails” in the town of Chignin (Cru Savoie). The vineyard was planted at a high density of 8000 vines per hectares in 1980, 1994 and 1997 on a South-West facing 30% slope.
Grape: Bergeron (aka. Roussanne)
Farming: Organic, Biodynamic
Aromatics: Ripe stone fruits (apricot, peach), brioche and spices, nashi pear and notes of acacia honey.
Palate: Generous and fleshy on the palate, peach and apricot aromas. Fine and elegant finish with a beautiful acidity carrying the wine.
About the wine: From 25-30 year old vines, the grapes are harvested by hand and transported in small boxes to ensure they arrive in optimal quality.
In the winery, the grapes are then slowly pressed (wholebunch), and vinified by gravity before natural fermentation. The wine is then aged in stainless steel tanks.
When to drink: Drink now or in the next 5-6 years.
Service: 10 to 12 degrees C.
Food match: Cheese fondue, Beaufort or Comte cheese, roast chicken.
