Aromatics: On the nose this is very Burgundian, Chassagne like... Beautfiul and elegant topped up Jura Chardonnay with notes of honey, toffee and suble oak spices.
Palate: Fine wine here, once again on the palate this Jura Chardonnay could rival many top Cote de Beaune yet it retain its Jura sense of place. White fruits, spices and nutty / yeasty character. Power, texture and elegance on the palate. Incredible purity and lengh with a beautiful mineral tension and great depth.
About the wine: High density plantings with 10 000 vines per hectares on limestone and marl terroir - very low yield. Aged in foudre and then in barrique 16-18 months, this wine is topped up (vin ouillé).
When to drink: Now or drink in the next 10 years.
Service: Serving temperature 8 to 10 degree C, use large Burgundy glass.
Food match: Old Comté! Chicken curry or roasted lobster.
