Aromatics: Strong and powerful oxidative character, nuttiness, cumin spices, high-toned.
Palate: Montbourgeau’s Vin Jaune is precise with rich, tradionnal and full of energy. The “Jaune” of Montbourgeau is more high-toned, less broad than most, perhaps but more fine, a clear reflection of the appellation of L’Etoile. Digest, dry and very mineral finish.
About the wine: If you like Vin Jaune or Sherry type wines, this is a powerful and flavourful oxidative wines. Picked by hand later than most white grapes in the Jura to get higher alcohol. Aged in 230 liters barrels for 7 years. The wines are not topped up and aged under flor. The barrels will be tasted 2 to 3 times a year.
When to drink: Drink now or in the next 50 years after vintage.
Service: 15 to 16 degrees C, decant for 30 min and enjoy in large Burgundy glass.
Food match: Long roasted with a rich mushroom sauce or paired with an old Comté for the local pairing made in heaven.
