Farming: Organic farming, with some biodynamic inspired plant solutions are sprayed in the vineyard.
Aromatics: Agrums, white flowers, ripe yellow fruits, gentle grilled and toasted notes.
Palate: On the palate this wine is powerful and vibrant, with a beautiful texture and energy. Mid palate is filled with yellow fruits and toasted brioche. The finish is long, with a unique tension and elegance. Special single vineyard worth tracking down.
About the wine: This vineyard is situated just above the village of Santenay, right above the 1er Cru Beaurepaire. 'Sous la Roche' is a steep vineyard with South East exposure. The terroir is made of limestone with stones on the top soil. Grapes are hand picked in small crates, sorting when the grapes arrive at the winery. Gentle and slow direct pressing whole bunches. Fermentation in oak barrel with no sulphur or other products added during the vinification. Ageing on lees 12 months in old oak barrels, with 6 months in stanilesssteel tanks to finish the natural decanting of the wines before bottling. Light filtration before bottling.
When to drink: Drink now or in the next 5-6 years.
Service: 8 to 10 C degrees in large burgundy glass.
Food match: Seafood, snails cooked with garlic and butter, Saint Jacques, Sandre filler with creamy sauce.
